This week has been loooonnnnngggg.....and slow. For me anyway. My job is a sleepfest and the only thing that was different this week was that I got cussed out by a customer after I calmly had explained our company policy and tried to give him a few alternatives. He just wanted to do it his way and started yelling and called us communists. My manager had to come over to get rid of him. Lovely. Gotta love customer service.
Andy has been busy this week at work and yesterday was his company's annual recognition ceremony for the hundreds of volunteers. He has been working really hard on this for months. He said it went well, but that he was also be happy for it to be over for the year and get back to all of the other things he has going on at work.
We are both really glad it is Friday.
I meant to post this sooner, but I made a BBQ Chicken Pizza this past weekend that we both loved and wanted to share the recipe.
[note: my measurements are just guesses at what I used - I didn't really measure at all while making this]
BBQ Chicken Pizza
2 or 3 boneless chicken breasts
1 T. veg. oil
1 small onion
1/3 c. of tomato sauce
1/3 c. ketchup
1/4 c. brown sugar
3 T. Worcestershire sauce
1 T. mustard
a little salt and pepper to taste
pizza dough (Pioneer Woman's recipe is the best!)
Chop onion and then add tomato sauce, ketchup, sugar, Wor. sauce, mustard and salt and pepper. Add a little more condiments to taste for your homemade BBQ sauce. Mix well in a small bowl. Chop chicken breast into bite sized pieces. Heat oil in pan and add chopped chicken breast. Brown chicken and then add BBQ mixture to the same skillet with the oil and chicken. Bring to a boil and then turn to low and let simmer for 15-20 minutes.
Spread BBQ chicken on top of pizza dough, top with cheese and seasonings. Bake for 10-15 min at 400.
