weekend recipe - bbq chicken stuffed baked potatoes


This weekend was a pretty low-key one for us.  I got a lot of much needed cleaning done and went through our clothes – got out winter stuff, got rid of quite a bit, and did laundry.  After all that cleaning, I decided to make a new recipe that I had seen on Kate’s blog (thanks for posting this recipe!).

BBQ Chicken Stuffed Potatoes

Ingredients4-5 large potatoes
1/2 c. light sour cream
2 green onions, chopped
1 1/3 c. barbecue chicken
1/2 c. reduced-fat cheddar cheese
BBQ sauce to taste
Poke potatoes with a fork and cook in the microwave for 10-15 min. until done.  Slice cooked potatoes in half length-wise and scoop out the potato, leaving some so that the skin maintains its shape.  In a bowl, mix potato with sour cream, 2 T. of the onions, bbq chicken, cheese, and a little bbq sauce (however much you like).  Place potato skins on baking sheet and re-stuff with potato/chicken mixture.  Cook at 375 degrees for 20-25 min.
These were delicious!  Andy loved them – even though he was skeptical when I first told him what I was making.  I didn’t have any ready-made bbq chicken, so I made my own by cooking 3 boneless, skinless chicken breast in a barbecue mixture (1/3 c. soy sauce, 1/3 bbq sauce, and honey) in the oven for about an hour.  This was more than we needed for the potatoes – I saved some to serve with rice this week for dinner.  And after I started cooking the chicken, I realized I didn’t have sour cream like I thought I did…so I improvised and threw in a few Laughing Cow cheese wedges….and it worked fine – but I think the sour cream will be better, so I’ll make sure I have some on hand next time.  I also didn’t use the green onions this time.  Still delicious!  And great leftovers for lunches.
